Pork Hand Pies

For her summer job, my younger daughter often has to pack her supper in a lunch bag, so was looking for something “fantastic and tasty” to switch things up. These pork hand pies are what we came up with.

Crust:
2 1/2 cups flour
1 tsp. sugar
1 tsp. salt
1/2 tsp. sage
2 sticks (8 oz) cold butter, cubed
1/2 cup plus 2 Tablespoons water
1 tsp. lemon juice

1 egg beaten with 1 Tablespoon water (egg wash to brush over filled pies)

Add flour, butter and seasoning to food processor. Pulse a few times to break up the butter a bit. Mix the water and lemon juice together. Pour in the liquid, pulsing the processor until the dough just comes together.

250 g (1 lb) ground pork
1/2 onion, chopped
1/2 apple, chopped
1 Tablespoon olive oil
1 tsp. Worcestershire sauce
